When I suggested that you start using powdered milk (mixed with water) to substitute real milk, I told you I would share my recipe for homemade pancakes. So here it is! No more buying boxes of pancake mix and finding you don’t have enough to get everyone through that Sunday morning breakfast unless you run out and get more mix.
- 2 C. Milk
- 4 Tbsp Vegetable Oil
- 2 Eggs
- 3 tsp baking powder
- 1 tsp salt
- 2 C. Flour
- Mix the wet ingredients. Then add dry ingredients. Mix well until there are still some lumps. You don’t want to over mix it. Lumps of flower will be eliminated as the pancakes cook.
- Spray your pan with a non-stick spray or you can add a little crisco or vegetable oil to a paper towel and rub it on the pan or griddle.
- With a ladle, add batter to pan for desired size. Once bubbles form on the top, turn.
Turn them into Chocolate Chip Pancakes
- 1/4 C. Cocoa Powder
- 1/2 C. Chocolate Chips
- Mix these two ingredients into the batter from above. Once cooked, enjoy your awesome pancakes!
Other suggestions would be to add fruit on top. Our family loves putting strawberries and whipped cream on top. What about your family?
